Join sustainable seafood advocate, author and chef Becky Selengut, and ecologists Steve Bondi and Dana Visalli at the North Cascades Basecamp on June 24 – 25th, 2011. Friday night we’ll introduce mushrooms of the Methow Valley, better understand their ecological role in the environment, and learn to identify several species for our Saturday fieldtrip. Friday night will also be a time to learn more about exactly what is meant by the term “sustainable” seafood, to clear up many common misconceptions.
Saturday’s all-day workshop will start in the morning with your choice: either a field trip to search and collect edible herbs, mushrooms and root delicacies with Steve Bondi, or a guided trout fishing trip with Kevin VanBueren. After a light lunch, we’ll reconvene for a cooking demonstration where you’ll learn to make: Cast iron rainbow trout with foraged wild mushrooms and herbs, followed by Smoked wild salmon with stinging nettle sauce and nettle gnocchi. Signed copies of Selengut’s new book Good Fish: Sustainable Seafood Recipes from the Pacific Coast will be available for sale.
Throughout the weekend we’ll explore the wild foods of Mazama throughout cedar forests, beaver pond wetlands, and riparian cottonwood galleries along the Methow River. Some of the foraged items we might find during the weekend include: Miner’s lettuce (Claytonia perfoliata), Oyster mushrooms (Pleurotus spp),. Black morels (Morchella elata), Glacier lily (Erythronium grandiflorum), Spring beauty (Claytonia lanceolata), Cow parsnip (Heracleum lanatum), Stinging nettles (Urtica dioca), Indian celery (Lomatium ambiguum), Wild mint (Mentha arvensis), Wild rose (Rosa spp)
